ISLAMABAD: Multani Sohan Halwa is a delicious and rich sweet treat that originates from the city of Multan in Pakistan. Below is a simple recipe to make it at home:
Ingredients:
- 1 cup semolina (sooji)
- 1 cup sugar
- 1 cup ghee (clarified butter)
- 1/2 cup water
- 1/2 cup milk
- 1/2 cup cornflour
- 1/4 cup almonds, finely chopped
- 1/4 cup pistachios, finely chopped
- 1/4 cup cashews, finely chopped
- 1/4 cup walnuts, finely chopped
- 1/4 teaspoon saffron strands
- 1/2 teaspoon cardamom powder
- Silver or gold edible foil (optional)
Instructions:
- Grease a plate or tray with ghee and keep it aside.
- Mix the milk and saffron strands in a small bowl and set aside to infuse.
- In a saucepan, combine sugar and water. Bring it to a boil, stirring continuously until the sugar dissolves completely.
- Let it simmer for 2-3 minutes to form a slightly thick syrup. Then turn off the heat and set aside.
- Heat the pan over medium heat and add ghee to it.
- Once the ghee is hot, add semolina (sooji) to it. Roast the semolina in ghee until it turns golden brown and aromatic. Keep stirring continuously to avoid burning.
- Once the semolina is roasted, reduce the heat to low and slowly add the cornflour while continuously stirring.
- Gradually pour in the sugar syrup, stirring continuously to avoid lumps.
- Add the saffron-infused milk, chopped nuts, and cardamom powder. Mix everything well until it forms a smooth, thick dough-like consistency.
- Transfer the mixture onto the greased plate or tray. Spread it evenly with a spatula.
- If using, gently press the silver or gold edible foil on top of the halwa for a decorative touch.
