ISLAMABAD: The Anda Tikki is a famous street-style food of Pakistan, adored by many for lunchtime cravings. Crafting it at home is a breeze, requiring only basic ingredients, yet the resulting flavour will undoubtedly beckon you for more.
Ingredients:
Split chickpea 1 cup
Salt to taste
Turmeric 1 tbsp
Black pepper 1 tbsp
Garlic cloves 4
Coriander seeds 2 tbsp
Cumin seeds 1 tbsp
Whole red chillies 10-12
Egg 2 (beaten)
Egg 1
Oil 2 tbsp
Onion (chopped) 1 cup
Tomatoes (chopped) 1 cup
Green chilies 2-3
Red chili powder 1 tsp
Salt to taste
Method:
- Begin by soaking lentils overnight in a bowl.
- Next, in a pan, combine water, soaked lentils, turmeric, black pepper, garlic cloves, coriander seeds, cumin seeds, and whole red chillies. Boil this mixture for 40 to 45 minutes until the lentils are 85% cooked.
- Allow the mixture to cool completely. Transfer it to a blender and blend until a smooth, thick paste forms. Shape the mixture into round kababs.
- Heat oil in a pan, dip the kababs in beaten egg, and fry until they achieve a light golden brown colour on both sides.
- In another pan, heat oil, add onions, and sauté until translucent for about 3 to 4 minutes. Incorporate tomatoes, green chillies, red chilli powder, and salt, cooking the masala for an additional 5 to 6 minutes.
- Crack an egg into the masala and cook for 2 to 3 minutes. Finally, add the prepared tikkis, ensuring all the masala is well combined.
- Sprinkle with fresh coriander for garnish and serve the delectable Anda Tikki with roti and raita.
