ISLAMABAD: BBQ chicken calzone is a quick recipe to enjoy with a classic combination of juicy chicken filling loaded with cheese and pizza sauce.
Ingredients:
- Chicken cubes: 1/2 kg
- Black peppercorn: 1/2 tsp
- Salt (to taste)
- Water: As required
- Flour: 3 cups
- Sugar: 1 tbsp
- Yeast: 1 ½ tsp
- Oil: 1 ½ tbsp
- Warm water: 1 cup
- Yeast mixture: 1 cup
- BBQ sauce: 1 ½ tbsp
- Hot sauce: 1 tsp
- Coriander powder: 1 tsp
- Mustard sauce: 1/2 tsp
- Red chilli powder: 1/2 tsp
- Mayonnaise: 1/2 cup
- Garlic powder: 1 tsp
- Boiled chicken: 1/2 kg
- Cheddar cheese: As required
- Marinara sauce: As required
- Olives: As required
- Egg yolk: 1 (for brushing)
Instructions:
- In a pan, add water, salt, and peppercorns. Let it simmer, then add the chicken and boil until fully cooked. Remove any scum and set the chicken aside.
- In a small bowl, combine warm water, sugar, and yeast. Stir well and let it sit for 5-7 minutes until the yeast activates.
- In a mixing bowl, add flour, salt, oil, and the prepared yeast mixture. Knead the dough gently.
- Cover the dough with cling wrap and let it rest for 30-40 minutes until it doubles in size.
- In another bowl, shred the boiled chicken.
- Add mayonnaise, BBQ sauce, hot sauce, mustard sauce, salt, coriander powder, red chilli powder, and garlic powder to the shredded chicken. Mix well.
- Once the dough has risen, sprinkle flour on it and knead it again briefly. Divide the dough into six equal portions and shape each into a ball. Roll out each ball into a round sheet.
- Spread marinara sauce in the center of each sheet, then top with the chicken mixture, cheese, and olives.
- Fold the dough in half, forming a half-moon shape. Seal the edges and make three small cuts on top with a knife to allow steam to escape during baking.
- Place the calzones on a baking tray, brush with egg yolk, and bake at 160°C for 20-25 minutes, or until golden brown.
