Beat the Heat with Lassi

ISLAMABAD: Lassi, made from yogurt, which in turn is derived from milk, can be enjoyed either sweetened with sugar or seasoned with salt according to individual taste.  In Pakistan, the salted version is typically consumed to beat the heat, while the sweet version is popular among both adults and children, especially in the mornings in rural areas. Here’s a simple recipe for making traditional buttermilk (lassi):

Ingredients:

  • 1 cup yogurt (unsweetened)
  • 1 cup cold water (adjust to desired consistency)
  • 1-2 teaspoons sugar or salt (as per taste)
  • Roasted cumin powder (for salted lassi)
  • Mint leaves (for garnish)
  • Ice cubes (for a chilled lassi)

Instructions:

For Sweet Lassi:

  1. In a blender, combine the yogurt and cold water and blend the mixture until smooth and frothy.
  2. In the next step, add the sugar and blend again until the sugar is completely dissolved.
  3. Pour the lassi into glasses. Add ice cubes and garnish with mint leaves.
  4. The sweet lassi is ready to serve.

For Salted Lassi:

  1. In a blender, combine the yogurt and cold water and blend until smooth and frothy.
  2. Add the salt and a pinch of roasted cumin powder. Blend again to mix well.
  3. Pour the lassi into glasses. Then add ice cubes and garnish with mint leaves.
  4. Enjoy your refreshing and traditional buttermilk (lassi).
