BAD: Cabbage rice is a nutritious and flavorful dish that’s easy to prepare in one pot. This recipe features basmati rice, aromatic spices, and cabbage.
Ingredients:
1 cup basmati rice
1 small cabbage, finely chopped
1 medium onion, thinly sliced
1 tomato, chopped
1 tbsp ginger-garlic paste
2-3 green chillies, chopped
2 tbsp oil or ghee
1 tsp cumin seeds
3-4 cloves
2-3 green cardamom pods
1 small cinnamon stick
2 bay leaves
2 cups water
Fresh coriander leaves for garnish
Salt to taste
Instructions:
Rinse the basmati rice thoroughly until the water runs clear, then soak it in water for about 30 minutes.
Heat oil or ghee in a pan or pressure cooker over medium heat.
Add cumin seeds, cloves, cardamom pods, cinnamon stick, and bay leaves. Sauté until fragrant.
Add the sliced onions and chopped green chilies, cooking until the onions are golden brown.
Stir in the ginger-garlic paste and sauté for one minute until the raw smell disappears. Add the chopped tomatoes and cook until soft and well combined with the onions.
Add the chopped cabbage and sauté for a few minutes until it starts to soften. Drain the soaked rice and gently mix it in with the cabbage.
Pour in two cups of water and season with salt. Stir well. If using a pressure cooker, cover and cook for one whistle on medium heat, then reduce the heat and simmer for about 5-7 minutes.
Once the rice is cooked and the cabbage is tender, your cabbage rice is ready. Garnish with fresh coriander leaves before serving.
