  • Chocolate cookies, as needed
  • 1/4 cup Butter
  • 1/4 cup Brown Sugar
  • 1/4 cup Crushed Chocolate cookies
  • 2 cups Heavy cream
  • 1 cup Cream cheese
  • 2/3 cup Powdered sugar
  • 1/2 tsp Vanilla essence
  • 1 tbsp Gelatin
  • 1 tbsp Lemon juice


  1. In a food processor, blend chocolate cookies, butter, and brown sugar until thoroughly mixed.
  2. Press the mixture evenly into small circular molds to form the crust. Allow it to set.
  3. Whip the heavy cream until it forms medium peaks. Set it aside.
  4. In another bowl, combine cream cheese, powdered sugar, salt, vanilla essence, and lemon juice. Beat until smooth for approximately 3 to 4 minutes.
  5. Incorporate the cream cheese mixture and gelatin into the whipped cream, beating until well combined. Gently fold in the crushed Chocolate cookies to complete the filling.
  6. Fill the crust molds with the prepared filling and refrigerate for a minimum of 6 hours, or preferably overnight, to set.
  7. Garnish the cheesecakes with a dollop of whipped cream and a Chocolate cookie on top.
