Ingredients

For Boiled Pasta:

Water, as needed

1 tsp salt

300 g penne pasta

For Masala Pasta:

1 tbsp chopped garlic

500 g boneless chicken chunks

1 cup tomato puree

2 tbsp ketchup

1 tbsp coriander powder

1 tbsp red chilli flakes

1 tsp black pepper powder

1 tsp red chilli powder

1 tsp salt

1 cup chopped onion

1 cup chopped capsicum

1 cup chopped carrot

1 cup chopped green onion

1 cup sweet corn

1 cup hot water

1 cup cheddar cheese

Boiled pasta

Chopped green coriander, as needed

Instructions

In a pot, heat water and add salt. Bring to a boil, then add the pasta. Cook until the pasta is 80% done, strain, and set aside. In another pot, heat oil and sauté the garlic for a minute. Add the chicken and cook until the color changes.

Add the tomato puree, ketchup, coriander powder, red chili flakes, black pepper powder, red chili powder, and salt. Cook for 5-10 minutes.

Add the onion, capsicum, carrot, green onion, and sweet corn. Cook for a minute, then add the hot water and cheddar cheese. Stir until the cheese melts.

Add the boiled pasta and mix well. Garnish with chopped green coriander. Your Masala Pasta is ready to serve.
