Ingredients
Four hard-boiled eggs, two large onions, two tomatoes, two green chilies, one tablespoon ginger-garlic paste, one teaspoon cumin seeds, one teaspoon coriander powder, 1/2 teaspoon turmeric powder, one teaspoon red chili powder, salt to taste, fresh coriander leaves for garnish, and two tablespoons cooking oil.
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onions and cook until they become golden brown.
- Add ginger-garlic paste and chopped green chilies. Sauté for 1-2 minutes.
- Add chopped tomatoes and cook until they become soft and the oil starts to separate.
- Reduce the heat and add the dry spice powders – red chili, coriander, turmeric, and salt. Cook for 2-3 minutes.
- Once the masala is well cooked, add boiled eggs. Coat them evenly with the masala.
- Add water according to your desired consistency. Cover the pan and simmer for 10-15 minutes.
- Garnish with fresh coriander leaves.
