Ingredients:
- 200g nuggets
- 1 cup chopped lettuce leaves
- 1 cup cherry tomatoes
- 1/2 cup roasted almonds
- 1 cup cabbage leaves
- 1/4 cup honey-mustard dressing
- 1/2 cup chopped onion
- 1 cup cucumber
- 1 cup carrot
- 1 cup sweet corn
Honey Mustard Dressing Ingredients:
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 1 tsp mustard
- 2 garlic cloves, finely minced
- 1/4 tsp salt
- 1/4 tsp black pepper
- 3-4 tbsp extra virgin olive oil
Honey Mustard Dressing Preparation: In a bowl, whisk together the vinegar, honey, mustard, garlic, salt, and pepper. While whisking, slowly stream in the olive oil until combined well. This dressing can be stored in a sealed container in the fridge for up to a week.
Method:
- Prepare the nuggets and slice each into three pieces.
- In a large bowl, combine the chopped cabbage, cherry tomatoes, roasted sliced almonds, chopped onion, cucumber, carrot, sweet corn, and lettuce leaves.
- Drizzle some of the dressing over the salad and toss to coat. Divide the salad among plates and top with the sliced nuggets. Add extra dressing if desired.
- Serve immediately, or store in the fridge.
