Lahore’s Malai Kofta Curry Recipe

ISLAMABAD: Embark on a culinary journey with White Kofta Curry—a delightful blend of spices and creamy richness.

Ingredients:

Kofta:

800 g Chicken mince

4-5 Garlic cloves

4-5 Ginger pods

1 tbsp Crushed cumin seeds

1 tsp Red chili powder

1 tbsp Crushed coriander seeds

1 tsp Salt

1/4 cup Oil

1/2 cup Onion paste

1 tbsp Ginger garlic paste

1 tsp Crushed cumin seeds

1 tsp Salt

1 tsp White pepper powder

1 tsp Crushed black pepper

1 cup Yogurt

Fried kofta

Dairy Cream

1 cup Hot water

Green coriander (chopped) for garnishing

Green chillies (chopped) for garnishing

Directions:

In a food processor, combine chicken mince, onion, green chillies, garlic cloves, ginger pods, crushed cumin seeds, red chilli powder, crushed coriander seeds, salt, and chopped green coriander. Process until well combined.

Shape the mixture into a small kofta and set aside.

Heat oil in a pan and shallow fry the prepared kofta until 80% cooked. Set aside.

In a pot, heat oil and add onion paste. Cook for a minute, then add ginger garlic paste and mix well. Add crushed cumin, salt, white pepper powder, and crushed black pepper. Cook for another minute.

Add yogurt and cook until oil separates.

Add the fried kofta and mix well. Pour in hot water and bring to a simmer.

Cover and cook for 10-15 minutes. Remove the lid and add Dairy Cream. Mix well.

Garnish with chopped green coriander and green chillies. Serve hot.
