Ingredients:
For the Schezwan Sauce:
- 10-12 soaked red chillies
- 1/2 cup ketchup
- 1-2 pods of ginger
- 1 tbsp soy sauce
- 1 tsp brown sugar
- 1 tsp sesame oil
For the Crispy Potatoes:
- Water, as needed
- 1 kg potato cubes
- 1/4 cup corn flour
- Oil for frying, as needed
For the Schezwan Chilli Potatoes:
- 2 tbsp oil
- Prepared crispy potatoes
- 1 cup capsicum cubes
- 1 cup onion cubes
- 1/4 cup Schezwan sauce (prepared as above)
- 1/4 cup ketchup
- 2 tbsp soy sauce
- 1 tsp black pepper powder
- 1 tsp salt
- Chopped green onions, as needed
- Sesame seeds, as needed
Instructions:
- Blend soaked red chillies, ketchup, ginger, soy sauce, brown sugar, salt, black pepper powder, and sesame oil until smooth. Set aside.
- Boil water in a pot and add potato cubes, cooking until they are 80% done. Strain and let them cool.
- Coat the cooled potato cubes with corn flour evenly.
- Deep fry the coated potato cubes until crispy. Set aside.
- Heat oil in a pan and add the prepared crispy potatoes, capsicum, onion, Schezwan sauce, ketchup, soy sauce, black pepper powder, and salt. Cook for 2-3 minutes.
- Add chopped green onions and sesame seeds, mix well, and serve. Your Schezwan Chili Potatoes are now ready to be enjoyed.
