ISLAMABAD: Olive brine chicken is a delicious dish where chicken is marinated in a mixture of olive brine (the liquid from a jar of olives) along with various herbs and spices.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup olive brine
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Sliced olives for garnish
Instructions:
- In a bowl, mix the olive brine, olive oil, minced garlic, dried oregano, dried thyme, salt, and pepper.
- Place the chicken breasts in a shallow dish or a resealable plastic bag.
- Pour the olive brine mixture over the chicken, ensuring it’s well coated. If using a plastic bag, seal it and massage the marinade into the chicken.
- Marinate the chicken in the refrigerator for at least 1 hour, or preferably overnight for maximum flavour.
- Preheat your grill or oven to medium-high heat.
- Remove the chicken from the marinade.
- Grill the chicken for about 6-8 minutes per side, or until it’s cooked and no longer pink in the centre. Alternatively, you can bake it in the oven at 375°F (190°C) for 20-25 minutes, or until cooked through.
- Once cooked, let the chicken rest for a few minutes before slicing.
- Serve the olive brine chicken hot, garnished with sliced olives if desired. Enjoy!
