ISLAMABAD: Custard Falooda is a creamy and delightful dessert. After a long tiring day, treat yourself to this refreshing treat.
Ingredients:
Chia seeds: 1 tsp
Water: 1 cup (for soaking chia seeds)
Corn flour: 1/2 cup
Water: 1 ½ cup (for corn flour mixture)
Sugar: 1 tbsp
Chilled water: as required
Milk: 1 L
Vanilla Custard Powder: 4 tbsp
Milk: 1 cup (for custard slurry)
Water: 2 cups (for strawberry jelly)
Strawberry Jelly Powder: 1/4 cup
Water: 2 cups (for banana jelly)
Banana Jelly Powder: 1/4 cup
Chilled custard
Chilled vermicelli
Chilled jellies
Soaked chia seeds
Chopped almonds & pistachios
Instructions:
Soak the chia seeds in water and let them sit for 20 minutes.
In a pan, mix water, corn flour, and sugar. Turn on the flame and stir continuously until the mixture thickens and becomes translucent. Pour the mixture into a seviyan maker and drop the seviyan into chilled water. Let it rest for 20-30 minutes.
Heat the milk and icing sugar in a pot, bringing it to a boil. Add the custard slurry, cook on medium flame while stirring continuously until it thickens. Add cardamom powder, cook until the custard is thick, and then cool to room temperature.
In a separate pan, bring 2 cups of water to a boil, add the strawberry jelly powder, and cook until dissolved. Pour into a mold and let it cool.
Repeat the process with the banana jelly powder.
Cut both jellies into small cubes and set them aside.
Assemble the dessert in glasses by layering jellies, chia seeds, custard, falooda seviyan, and chopped nuts. Serve chilled.
