Dehi Phulki; an Essential Part of Iftar Menu

ISLAMABAD: Dehi Phulki is a traditional Pakistani street food that is an essential part of the Iftar table in every household. It is essentially a hollow and crispy sphere made from chickpea flour (besan) batter.

Dehi phulki is popular due to its crunchy texture and flavorful taste. It’s a delicious option for those looking to add something to their tables that is healthy and light to digestion.

Here is a simple recipe for preparing at home for Iftaar.

Ingredients:

1 cup chickpea flour (besan), 1/4 teaspoon baking soda, 1/2 teaspoon salt (adjust to taste), 1/2 teaspoon red chili powder, 1/2 teaspoon cumin seeds, 1 green chili, oil for deep frying, tamarind chutney or green chutney, for serving, yogurt, chaat masala, chopped onions, boiled potatoes.

Instructions:

  1. Combine chickpea flour, baking soda, salt, red chili powder, and cumin seeds in a mixing bowl.
  2. Gradually add water to the dry ingredients to form a thick batter.
  3. Heat oil in a deep-frying pan, when the oil is hot, reduce the heat to medium-low.
  4. Using a spoon or your hands, drop small portions of the batter into the hot oil. Fry the batter in batches.
  5. Fry the phulkis until they turn golden brown and crispy.
  6. Once fried, remove the phulkis from the oil and drain them on paper towels to remove excess oil.
  7. Put the phulkis in salted water for 5 minutes
  8. In a separate mixing bowl, add beaten yogurt, phulkis, boiled potatoes, chopped onion, chaat masala, and tamarind chutney or green chutney.
